It’s in the process of how the Bibingka was made and it’s the secret recipe handed down through generations. They still use the old-fashioned way of cooking. They use century old stone grinders to produce finer galapong from high quality glutinous rice. Bibingka batter is cooked in a clay pot lined with banana leaves and heated with coal both at the top and bottom to bake.
